Maruyama Chicken
I have quite a few recipes I have developed over the years for various people, for various reasons. They range from starters through to desserts. Even a drink or two. I find it huge fun to play about in the kitchen, taking a recipe and melding with another, changing it so much it bears only passing resemblance to the original. Or starting from scratch with an array of ingredients and building a dish based around a technique and/or a main ingredient. I tend to do this ‘cuisine-play’ when I have good friends around, then we eat the results! I like having an audience, I guess, so I hadn’t been much in the mood to do any experimenting for the last couple years or so, living toute seule… and on Atkins to boot.
That is… until lately… now I have someone around me who appreciates my culinary efforts, is ‘kindly critical’, AND knows how to match wine to a meal, so I feel much more inspired. So I have been banging out new recipes in my little postage-stamp-sized kitchen. Ah... for a big kitchen where I could really let rip...
In my dream kitchen, I will have either a four-oven Aga or a commercial Viking or Wolf range oven plus a centre island with a proper gas-fired wok burner with seating around the countertop so people can be in the kitchen with me and watch me and we can socialize, drink wine and converse while I cook. I will have a Kitchen Aid area, a marble table for pastry and cool granite countertops. I will have plenty of counter space/preparation area so my friends can pitch in and help, if they like. Plenty of seating so they can just kick back and watch if that is more appealing. I think the kitchen is the Spiritual Centre of the home and I want a big kitchen! Space for a sofa or two, space for dogs and children and lots of big windows bringing in the light. I LOVE cooking for people and talking, laughing, drinking wine or cocktails and all the while discussing things as I cook. I suppose it’s a bit showing off, maybe, but on the other hand, I like showing people how to do what I do as I enjoy sharing my knowledge. Good thing I chose the profession I did, huh? (Well, one of them at least…)
Whenever I make one particular recipe, Maruyama Chicken, I can’t help but chuckle to myself. I made up this recipe in honour of my friend Karen Maruyama when we were both students at SDSU. Kind of like Teriyaki Chicken but better, with lots of garlic and the bite of ginger and chile marinated into it. It’s served with coconut rice. I brought it over to her house for a ‘Japanese Potluck’ I had been invited to. Her aunt, uncle, and some of her cousins were visiting from Japan and this was a welcome dinner in their honour. After a hysterical evening, started by lots of toasts with little cups of sake, and then sitting around laughing and eating, her (male) cousins brought out this t-shirt they wanted to give to me, if I would model it and let them take a group picture. Karen and I looked at each other… the t-shirt was in Japanese. Since her Mom didn’t say anything, we thought, yeah, go on, it’s harmless enough, so I went in the other room and changed into this rather tight t-shirt. “What’s it say?” I asked. “It says ‘Japanese’, as in female Japanese,” one of the cousins replied. So we took lots of pictures with the cousins pointing at my t-shirt and grinning and me in the middle smiling (as you do when you have no idea what is going on.)
It was only later, when we looked at copies of the developed photos that we realised what all the smirking was about on the night. Emblazoned across my pert 36DD chest was the Japanese for Nipponese or Japanese-American street slang ‘Nip on these’. Japanese girls tend to be rather less well endowed (unless surgically enhanced) than most Americans are. (I say Americans because I include women as well as a lot of American men… I think most Japanese women would be proud to sport some of the man boobs I have witnessed on both Florida and California beaches…)
I am sure Karen’s cousins got a lot of mileage out of the photos when they got back to Yokahama…
Still, got a nice t-shirt out of it.
Chicken Maruyama
Marinade
1/4 cup honey
1 cup soy sauce
½ cup Mirin (Japanese Sweet Cooking Wine)
1/4 cup oyster sauce
¼ cup brown sugar, packed
4 tablespoon fresh ginger, grated
6 garlic cloves, pressed or minced
1 tablespoon ketchup
½ yellow onion, grated
1/2 teaspoon cayenne (or more/less to taste)
1/4 teaspoon cinnamon
First make the marinade:
Combine all the ingredients in a saucepan. Heat on stove stirring until the brown sugar is dissolved and all the ingredients are thoroughly blended. Allow to come to room temperature. The marinade can be made ahead of time and held under refrigeration for three days. You get best results if you use it right away, though.
Marinade the chicken: If using the boneless breast/thighs cut up, a couple hours marinating will suffice but I leave it overnight. If using the bone-in chicken, I leave it for 24 hours marinating in the fridge, turning it several times. This can be facilitated by bunging the whole thing in either a heavy duty freezer bag and turning it over every few hours or into a large Tupperware container and just giving it a good shake when you remember.
Drain the chicken, reserving the marinade, and either bake in a pre-heated 375°F/180°C oven on a rack over a foil-lined grill pan/baking sheet or on the BBQ, over coals that are grey-ashed over (so medium heat.) You could also use the marinated meat to do kebabs, threading the meat on wire skewers or bamboo sticks. (Soak the bamboo sticks in water for a few hours so they don’t burn from the heat of the BBQ.) The chicken interspaced with red, yellow and green bell peppers, fresh or canned pineapple chunks and ripe cherry tomatoes would be a colourful and flavourful mix.
While the chicken is cooking, reduce down the marinade to about half of the volume or less. It will go very dark, thick and syrupy. At this point you can strain it for a glossy glaze or leave it as is for a chunkier sauce. Pass this around so people can help themselves to more.
Serve with coconut rice and Yum salad, if desired.

Ahhhh yes, it’s finally Spring!
Well, today I start back my French lessons at Greta in Pontivy.As usual in things like this, I screwed up the times I am supposed to be there and arrived a whopping 3 ½ hours early. So now I must find something to do with my time until 1.30 this afternoon.
I walked down to Le Grand Café and, lo and behold, they have put their terrasse out. This is like one of my most favourite things, sit on the terrasse, have a petite crème and write something for Kittychat. It makes me happy, it’s so French.
I have my view of the horse chestnuts trees in bloom which encircle the Place Briard. Directly across is Le Cul-de-poule Creperie Restaurant Breton (Service Rapide et Continu), then Laverie Napoleonville (lavez votre couette pour 7.50€) then the Cordonnerie du Centre (clefs minute) which is closed today, as it’s Monday, Market Day. Why does half of Pontivy shut on Monday Market Day? Odd… At least my bank, Crédit Agricole opens up in the afternoon, unlike most other branches in the region, which are shut on Mondays.
Big market today in Pontivy so I think we will go stroll around it and do some window shopping, say hi to some of the stall holders we know. Pity it’s so grey and overcast and keeps spitting rain…
Ah, but that’s Spring here in Brittany.

Why?
Why does my former husband have to be such a flaming asshole? Why does he need to cause me such stress?
Now calling me and telling me has taken ALL of my things down to the tip. Accusing me of 'shagging' the guy across the road. Who??? No. My God, how absurd.
When he does stuff like this it just reminds me exactly why I am so glad to be rid of him. Why I left him.
You know, I left him for my sanity, to be free of his overbearing presence, I left him so I could find myself, to experience something other than despair. I left him for many reasons, and the greatest, I suppose, no longer applies.
Bloody hell... I really don't need this right now...

I'm still here...
Just lots going on, not all of it good and nothing worth discussing at this particular moment in time. Just got back from a hellish 15 days in the UK... I got to do nothing for myself and didn't get to see friends I wanted to see (like DC) and quite frankly I am really pissed off about it.
Good news is that my jointly-owned house with my almost-ex-husband is now up for sale on the open market with Bridgfords in Northwich. Here is a link.
So I think time to start writing on here again. There are a few things I need to start addressing again and some things I want to work out. As usual, this Blog is for me, but also for my son, sister, family and friends to know what is happening with myself and my girls.
We all have choices in life, if you choose to read this, great, hope you like it and get something out of it. If not, well, that is also your choice.
I am opening up comments again (that is if I can figure out how to do it... where is my Computer geek when I need him?) Since this is now a privately accessed Blog I think it will keep the piss-takers away and I will keep comments open until I choose to go Public again... but that will not be for some time, I think.

Happy Birthday to me
Today is my birthday. We are going to lunch in Guémené-sur-Scorff to Gosta Goa for a lovely Indian/Goan meal. They have a 10€ lunchtime formula meal. I will post later how it was!
If my Mom was still alive she would have called me at 5.45 am (her time) and said, "Guess what I was doing 48 years ago? Giving birth to the most beautiful little girl..." Awww... I miss you Mom.
So raise a glass of rouge for me. I will do the same for you.

Newsletter
Hello world.
Because I am only able to update this Blog so infrequently, and because I have received some 'hate e-mails', I have decided to make this Blog accessable only by password. To that end, I have restricted access to my past postings in the archives. You can still read them, but you will need to ask for a password to do so.
I will send out a weekly or so newsletter to those of you who are interested to let you know when I update this Blog.
Drop me an e-mail and I will add you to my list.
I hope you understand my reasons for doing this, I like to be honest and open but I also don't need the aggravation and stress, either. This is supposed to be a theraputic outlet for me, not something where some silly people can gather information to use against me.

Don du Sang
I have been sooooo cold, my feet and hands have been freezing. Plus soooo tired that I have been taking naps every afternoon for hours at a time. I just have no energy whatsoever.
Even so, I thought I would try to donate blood when the 'Don du Sang' was on in Pontivy the other week. After managing to convince the doctor that I could answer her questions if she wrote them out. (Have I ever murdered a dog? Why would I do that? Oh, I get it! Have I ever been mordu by a dog-- bitten! Um, the answer is non.)
She pricked my finger for the hemoglobin/hematocrit test. As soon as saw the blood, I knew the count would be low as my blood was pale red, not rich red. (I have been borderline anaemic my whole life but still have donated blood or plasma since I was 18.)
"Non, we cannot allow the donation. The hemoglobin is only 9.8. You must be at least 12 for women for us to accept a donation. But we will take a tube, if you like, and test it and send you the results. If you still want to donate later, when your iron count is up, you can do so then, we would welcome it."
Ok, fair enough.
I went to my own doctor later that day as she had suggested I get some iron supplements. He decided to do a blood test to check if my thyroid was playing up, because of the fatigue I was experiencing and the coldness and numbness I was experiencing in my extremities. Got the blood test done the next morning, started the iron supplements right after that (one morning, one evening) and the lab faxed through the results to him that night. Next day I went in to see if I needed anything else.
'We need to increase your iron intake. Take two in the morning, with lunch and again at night, so six per day. Also we must stop your règles for the time being. You still have them every month?'
Oh yes. My Mother didn't start her menopause until she was 65 and I take after her...
'You will still be fertile for up to 18 years, perhaps...' (Zounds!!) 'What do you take for contraceptives?'
'Well abstainance has been working quite well for over a year', I replied, dryly.
'I see. Well, you cannot take the combined oestrogen pill because of your history of deep vein thrombosis, but we must stop your blood loss. Your iron count is dangerously low. It should be between 160 as a high, down to 15 absolute minimum. Yours is 5. So I will give you something to stop the the règles along with the progesterone-only pill. This will strenghten your uterine walls plus help stop the blood flow or lessen it considerably. This in combination with the vitamin C and iron will help bring your iron levels back up. You should see your fatigue lift as well.'
So a week later and yes, my fatigue has lifted somewhat. I don't need a nap every day. My hands and feet are not quite as cold and I am not as pale as I was. However the stuff I took did not really stop my period from happening so I am back to square one with the iron.
Any female reading this who feels unusually tired, and is of child-bearing age, might ask their own doctor for a blood test and especially the test of the iron in the blood. It will help to put you on iron/vitamin C supplements. (The vitamin C helps the absorption of iron. Tea diminishes it, by the way. So drink less tea and never with either an iron-rich meal or when taking a vitamin that contains iron.)
